Meat Curing 101: The Art of preserving meat at home

Join an intimate group of passionate food lovers as we dive into the world of cured meats. Unlike other fermented foods, curing meat requires a certain level of precision and knowledge to ensure safety. In this class, you’ll learn the basics of curing meat at home safely, so you can enjoy this rewarding practice and art while making your own delicious cured meats.

Good-quality cured meat can be expensive, but doing it at home allows you to cut costs and add your own personal touch to every creation.

This class offers a general overview of how to cure meats safely in your own home. You’ll learn techniques for curing a variety of meats, including Coppa, Lomo, Salami, and more. People have been curing meat for thousands of years, but today it’s a practice mostly left to professionals—ranging from local artisans to massive factory production. While meat curing does require some essential knowledge, it is, in many ways, incredibly simple.

After learning the basics, we’ll sample some salami and enjoy homestead treats like sourdough bread and kraut.

About your teacher:

Yoshua has been teaching people how to cook and homestead for over a decade. For many years he was the co-host and co-creator of a show called Brothers Green Eats, an alternative cooking show that garnered millions of fans and over 100 million views. Along with his brother, they traveled the world teaching people how to cook creatively with what they had, ditching fancy ingredients and making cooking accessible to nearly anyone. They even ended up with a show on MTV cooking for celebrities around the globe. Now, Yoshua resides in Boulder, living with his partner and 9 month old Amiya, where they have a 5 acre homestead with goats, chickens, rabbits and a deep connection to nature.

These classes are fun, free flowing and so much more than a step by step guide to making sausage, they are a journey into the creative process that births life itself.
